Miso soup without dashi is of Japanese origin. Traditionally, it is prepared with miso paste and dashi (a flavorful broth made from kelp and bonito flakes). Fortunately, for those who prefer a dashi-fee miso soup, I have just the best recipe for you.

Ingredients for Miso Soup Recipe Without Dashi
- 3 tbsp. miso paste (more to adjust taste)
- 4 cups of water
- 1 cup of cubed tofu
- 1 cup thinly sliced shiitake mushrooms
- 1 cup spinach or other leafy greens yo have
- 2 cups thinly chopped spring onions (the white and green parts separated)
- 2 cloves of minced garlic
- 1 tbsp soy sauce (substitute with tamari for a gluten-free choice)
- 1 tbsp. sesame oil
- 1 tbsp. freshly grated ginger
Optional ingredients
- A pinch of red pepper flakes
- Cooked rice for serving
Instructions
Step 1: Prepare the vegetables
- Rinse your spinach and chop
- Thinly slice the shiitake mushrooms
- Dice tofu into small cubes
- Grate the ginger and mince the garlic
Step 2: Sauté the herbs and spices
- Heat the oil in a soup pot
- Add the grated ginger, minced garlic, and the white part of the onion
- Sauté for 2-3 minutes
Step 3: Built the soup base
- Put the water into the pot and let it boil, Reduce heat to simmer.
- Add the sliced shiitake mushroom and cook for up to 5 minutes or until tender.
Step 4: Incorporate flavors
- Scoop some of the hot broth into a bowl and dissolve the miso paste
- Stir the broth and miso paste mixture into the pot, followed by the soy sauce.
- Stir in the sesame oil for a rich nutty flavor and a pinch of red pepper flakes if you love some heat.
Step 5: Add the tofu and chopped spinach
- Add the cubed tofu to the soup and simmer for 3 minutes
- Add the spinach or your leafy greens and allow them to wilt slightly
Step 6: Serve to your liking
