Ingredients for Miso Soup Recipe Without Dashi

  • 3 tbsp. miso paste (more to adjust taste)
  • 4 cups of water
  • 1 cup of cubed tofu
  • 1 cup thinly sliced shiitake mushrooms
  • 1 cup spinach or other leafy greens yo have
  • 2 cups thinly chopped spring onions (the white and green parts separated)
  • 2 cloves of minced garlic
  • 1 tbsp soy sauce (substitute with tamari for a gluten-free choice)
  • 1 tbsp. sesame oil
  • 1 tbsp. freshly grated ginger

Optional ingredients

  • A pinch of red pepper flakes
  • Cooked rice for serving

Instructions

Step 1: Prepare the vegetables

  1. Rinse your spinach and chop
  2. Thinly slice the shiitake mushrooms
  3. Dice tofu into small cubes
  4. Grate the ginger and mince the garlic

Step 2: Sauté the herbs and spices

  1. Heat the oil in a soup pot
  2. Add the grated ginger, minced garlic, and the white part of the onion
  3. Sauté for 2-3 minutes

Step 3: Built the soup base

  1. Put the water into the pot and let it boil, Reduce heat to simmer.
  2. Add the sliced shiitake mushroom and cook for up to 5 minutes or until tender.

Step 4: Incorporate flavors

  1. Scoop some of the hot broth into a bowl and dissolve the miso paste
  2. Stir the broth and miso paste mixture into the pot, followed by the soy sauce.
  3. Stir in the sesame oil for a rich nutty flavor and a pinch of red pepper flakes if you love some heat.

Step 5: Add the tofu and chopped spinach

  1. Add the cubed tofu to the soup and simmer for 3 minutes
  2. Add the spinach or your leafy greens and allow them to wilt slightly

Step 6: Serve to your liking
